Pepper steak n rice

yeah, nothing major to talk about this evening except my dinner. HA!
All the babies are still up, need to get them down soon as Big Brother is on right now. Good thing I DVR'd it in the bedroom to watch later. So we're watching Fear Factor.

Pepper steak -

1 large can tomato juice
2 bell peppers, cut in strips
1/2 large onion, chopped
1 lb meat for stew (I buy mine already cut up.. saves me time!)
1 cup flour (any kind)
2 cups rice

Pour cooking oil in skillet to cover the bottom. Coat the meat with flour and add to pan, cooking on medium until browned on both sides. Pour whole can of tomato juice in a large pan, set to low setting (2 - 3). Fill juice can with water and add to large pan. Add bell pepper, onion, browned meat, salt & pepper to taste. Cook on low 1 1/2 hours until meat is tender. 20 minutes before pepper steak is finished, prepare rice according to package directions. (I cook mine in the microwave for 18 minutes on high with cellophane on top)

Lay down cooked rice on plate and top with the pepper steak & broth. Enjoy!
